Thai Mango Stirfry Sauce

Happy Friday! I hope all of you had a good week.

I finally started feeling better yesterday and managed not to miss any of my training runs! Being sick for almost an entire week is NOT fun. Sadly, I didn’t get in any strength training, but of course marathon training is my priority right now.

Also, last night I made a Thai Mango Seitan Stir Fry recipe from Connoisseurus Veg. Overall, the dish was very good, but the sauce was AMAZING! I would probably switch up the protein/vegetable combo, but I wanted to share the sauce recipe with you all.

Just throw the following into a blender:

  • 1 mango, diced
  • 1 Tbsp. Asian chili paste
  • 1 Tbsp. soy sauce
  • 1 tsp. rice vinegar
  • Juice of 1 lime
  • 1 tsp. cumin
  • 2 Tbsp. fresh grated ginger
  • 2 cloves garlic
  • 1/4 cup cilantro

Blend on high until smooth. Once you’ve stir-fried up your protein and veggies, add the sauce to the pan and heat through for 2 minutes or so.

The possibilities are endless :)
